Vegan MoFo! Day Five: Chocolate Biscuits


Sorry for the delay on our fifth VeganMoFo post! We've been working very hard to make our local Gay Pride celebration a success and it has been quite a busy few days.

We wanted to share one of our easier recipes with you today. This is another one that we get requests for during our weekly Sunday brunches.

These biscuits are quick, delicious, and impressive- especially for those guests that may not be convinced vegan pastries can be just as savory and scrumptious as their egg and diary filled counterparts!

You will only need two ingredients.

You will need:
1 tube of Pillsbury Crescent Rolls
1 bag of vegan chocolate chips

So first, let's talk about these two ingredients.

As mentioned in our previous blog post Quick and Easy Impressive Bread which also involved Pillsbury Crescent Rolls- they are vegan... that doesn't mean they are natural... just that they are animal free. We've seen some amazing things done with these guys at our monthly vegan potlucks. Veggie dogs in a blanket, mini enchilada rolls, apple turnovers... they're so versatile!


Now, as far as the chocolate chips go, you'll most likely be able to find them at any grocery store. The Ghirardelli Semi Sweet chocolate chips are confirmed as being egg and diary free and from what we understand there are a few other options as well.
If you can't find any,  you could always crush a bar of dark chocolate and make your own chips! We've noticed most stores carry the Endangered Species bars. (Just double check the back of your bar, not all dark chocolate is animal product free!)

What to do:
Pop, unroll, and separate crescent triangles. 

Put about 2 tablespoons of chocolate chips into each triangle and roll upwards while closing sides until a fully closed roll is formed. 

(If not all sides are sealed chocolate chips will spill out while cooking.)

Set each roll on a cooking sheet at least an inch apart from each other and bake according to instructions on tube. They will most likely need to be cooked longer than directed. Check frequently and remove from oven when rolls are golden brown.

Your rolls should come out soft, warm, and gooey on the inside!

These are a real brunch treat and your guests are sure to love them!

Mango Pancakes


There's nothing like a nice fluffy animal-product free pancake made with love and eaten while watching cartoons on a lazy weekend morning. And adding fruit to your pancakes makes them that much better!


There's the typical fruits- blueberries, bananas... but what about something a little more exotic? A little more refreshing? How about mangoes?


It may sound strange but when it comes to adding fruit to pancakes nothing is quite as delicious or unique as mangoes. 


Making vegan pancakes is easy and including the mango is just a few more small steps!


You will need: 


1 ripe mango
1 cup flour (whichever kind you prefer) 
1 tablespoon organic sugar 
2 tablespoons baking powder 
1/8 teaspoon salt 
1 cup almond milk 
2 tablespoons oil


First chop your mango around the pit and remove the peel. We like to use the method where you cut 4 sections and then carve a lined pattern into the mango section, turn inside out and slice off squares.



Once you have all your mango diced, place into a small bowl and set to the side. 

















Then combine all dry ingredients- flour, sugar, baking powder, and salt in a medium to large bowl. Stir well.


Now add in wet ingredients- almond milk and oil and continue to stir until smooth.


Once all the lumps are out add in half of the mango pieces from the bowl and throughly mix in.


Heat a non-stick pan to medium heat. Once heated, spoon out batter to desired pancake size. Flip when pancakes begin to bubble.



Continue to cook on opposite side until golden brown or slightly darker depending on preference.


Once batter is gone stack pancakes in individual stacks and top with mango from bowl. Should serve 3-4 people. 


These are great just the way they are but they are also great served with maple syrup!


Now, put on some cartoons and enjoy!

For the Kids: Babbling Beetles Over Bananas!




So here's a little something from The Two Vegan Ladies for our younger followers. It's a great breakfast or snack and it's really quick and easy to make. This is something you parents out there can certainly have fun making with your kids. And it's good for them!


Babbling Beetles Over Bananas!


Don't worry, no adorable insects were harmed in the making of this dish! We call them babbling beetles because when you add all the ingredients together you're going to hear something magical!


What you'll need:
One Banana
1/4 Cup Whole Raw Almonds
1/2 Teaspoon of Brown Sugar


First, grab a square of aluminum foil and spread your raw almonds out evenly on it.


Then, stick your aluminum sheet in the toaster oven (or conventional oven) and toast for about 5-7 minutes. If you're using a conventional oven preheat to 375ยบ first and try 8-10 minutes.




Now, while your almonds are getting nice and toasty peel your banana.

Did you know humans are the only animal who open their bananas from the top stem? All other animals pinch either side of the bottom portion and pull the peel apart! Give it a try!




Next, cut or break your banana into medium size pieces and set them in the bottom of a cereal sized bowl.


Are your almonds ready? Don't they smell delicious?



Carefully remove your toasted almonds from your oven or toaster oven and slide them in your bowl on top of your banana pieces.



Now for the last step sprinkle your brown sugar on top, and listen! Do you hear the beetles talking and scurrying around with the bananas? Magic!
